Butternut Squash Two Ways!

I’m here with something a little different today! A foodie post!!!

As the temperatures start to drop, smells of comfort food begin to fill the air. Chunky soups, chilis, and hearty meals are starting to grace tables across the country. In an attempt to incorporate more veggies into my diets, I’ve been trying new things. While walking around Trader Joe’s, ( I was hungry too, never a good combo) I came across some peeled and cut butternut squash and tossed it in the cart.

On the way home, I fled to Pinterest to look at ideas on what the heck to do with this squash. I saw a few things that interest me, and come up with some hybrid ideas of what I thought would taste well together.

Thinking about what I already had in my fridge at home, I came up with these two ideas based off the recipes I saw on Pinterest.

Recipe 1: Roasted Butternut Squash with brussels sprouts and apple in a dijon vinaigrette

What you will need:

  1. Your peeled and cut squash
  2. Apples (of your choice)
  3. Brussels sprouts
  4. White Wine Vinegar
  5. Dijon Mustard
  6. Olive Oil
  7. Minced Garlic
  8. Salt & Pepper for seasoning

Preheat the oven to 400 degrees 

Step 1: Line a cookie sheet with aluminum foil

Step 2: Chop your Brussels sprouts & apple

Step 3: Lay the cubed squash, apple, and sprouts out flat on the cookie sheet

Step 4: Drizzle generously with Olive Oil (Or an specific cooking oil of your choice)

Step 5: Season with sea salt and black pepper

Step 6: Make Dijon Vinaigrette (found a simple recipe on Google click here: http://www.bonappetit.com/recipe/dijon-vinaigrette)

Step 7: Pour the Dijon Vinaigrette over the cubed squash, apple, and sprouts.

Step 8: Let roast on 400 degrees for 30-40 min (depending on how soft you want the squash)

That’s it!!

Recipe 2: Honey roasted Butternut Squash with dried cranberries and feta cheese

What you will need:

  1. Your peeled and cut squash
  2. Honey
  3. Dried cranberries
  4. Feta cheese
  5. Olive Oil
  6. Salt and Pepper for seasoning
  7. Parsley

Preheat the oven to 400 degrees

Step 1: Line a cookie sheet with aluminum foil

Step 2: Lay the cubed squash flat on the cookie sheet

Step 3: Drizzle generously with Olive Oil (Or an specific cooking oil of your choice)

Step 4:  Season with sea salt and black pepper

Step 5: Drizzle with honey (try to avoid getting it all over the aluminum foil, because it will burn)

Step 6: Let roast on 400 degrees for 30-40 min (depending on how soft you want the squash)

Step 7: Add the feta and dried cranberries when removed from the oven to warm them up

Step 8: Garnish with parsley

That’s it!
